I am fully aware The Holiday is not quite here, but this year will be the first time I’ve had the opportunity to cook Thanksgiving dinner for my family in about five years. When I retired, my husband and I opted to travel the country, living fulltime in our RV, clearing our bucket list and volunteering in State parks. That five-year trip was an exceptional adventure. Now, as I get ready to move back into a “Brick and Stick” house and wait for the delivery of my personal belongings from storage, I’m recalling the incredible number of disasters—both imagined and real that happened over the fifty odd years when I was in charge of the kitchen, menu, turkey, etc.

So, what I’d like to do is share a few ground rules guidelines that might help you get through the holiday with less stress and, hopefully, a little more peace on earth.

Again, and this bears repeating: What can go wrong usually will.

Typically, it takes about five days to thaw a 24 lb. turkey. I found out the hard way, that this feat can be accomplished in about two to three hours. It requires a large, clean cooler. Place the cooler in a bathtub. Fill it with lukewarm water, immerse the frozen turkey and spin until the water cools. Dump the cold water and begin the process again. Repeat until the turkey thaws.

You’re wondering how I know this. One year, when newly a nurse and far from my hometown, several of the single nurses decided to have a “friends” holiday. Since our employer provided each of us a turkey, as a group, we donated the excess birds to a local church for their holiday food drive. We also opted to split the Thanksgiving “on call” hours into eight-hour shifts. At eight AM on Thanksgiving Day, the nurse relieving me from call handed me a frozen turkey. That’s right. 24 lbs. to be cooked by 4 PM.

My friends and I survived with a few adjustments and had a terrific holiday. But I learned a few things that day which have served me well over the years. These are not really rules for holidays but think of them as guidelines. Please use what you can and ignore the rest.

When you have a galley kitchen in a tiny apartment, people don’t usually invade your space. Unless they really want to help you cook. Make a plan and stick to it. Check back with the people who agree to help with the cooking to make sure you stay on the same page.

This Frozen Turkey event exacerbated the control freak in me. I never approached a large gathering or a family holiday in the same frivolous way as I did on that single girlfriends Thanksgiving.

Rules Guidelines for Holiday Survival

  1. Don’t panic.
  2. Plan ahead.
  3. Clean out the fridge before the big day. This will assure the storage containers are clean and available.
  4. Make a list of things you can cook ahead that will not suffer in reheating. Desserts, rolls, snacks, are an excellent choice.
  5. Assign side dishes, dessert, etc. to relatives who want to help. This only works with reliable people who will stick to your plan.
  6. Remember your company will probably show up early, to assure them a good parking spot.
  7. Be prepared for people who want to help in the kitchen on the day. Leave chores you can trust them with and set up for them. I usually set the table but don’t add napkins, silver, serving spoons to the table. I assemble these things on a tray. Assign the chore, relieve the stress on the kitchen and appreciate the help.
  8. When you assign side dishes to relatives, be specific about what you can cook. You cannot cook your turkey when friends and relatives show up expecting you to manage the cooking or reheating for 120 side dishes at different temps while you are cooking turkey. Remember, 1 oven, 1 microwave, 1 toaster oven, is usually all that’s available. In a pinch, you can empty the dishwasher, turn on the drying cycle and load the reheated food into the top rack while you manage shifting other sides around for reheating. Rolls do okay but keep an eye out for food drying out. Short term use.
  9. Make sure you have extra foil and plastic wrap on hand as well as containers you don’t need to have returned. I buy a pack of easily forgotten containers at the Dollar Store, along with a multipack of shower caps. The shower caps are great for covering pies, cookies, and individual plates. I think you get twenty for $1.
  10. Remember, the oven is only so big. In an apartment you might not be able to fit a giant bird in there. Two birds are better than one. Double the dark meat. Two wishbones, need I say more? You can cook the smaller birds back to back. When you carve and serve the first, slip the other precooked turkey into the oven while your guests are enjoying the first bird.
  11. If you’re also having a houseful of company, make sure you plan for a good breakfast. I usually do an egg, sausage, and bread casserole assembled the night before, cooked first thing in the morning and served with fruit, coffee, and sweet breads. This breakfast is hearty enough to keep the family satisfied till dinner is ready midafternoon. It holds up well for stragglers, too.

And I’m including a real southern recipe for Corn Pudding just in case you can’t take one more year of looking at the green bean casserole.

Corn Pudding Recipe

¼ cup of all-purpose flour
1 Tbs. sugar
1 tsp. salt
¼ tsp. pepper
3 cups fresh or frozen corn, drained, and divided
3 large eggs
2 cups whole milk
¼ cup unsalted butter melted
1 ½ Tbs. scallions chopped, optional

Grease and flour an 8×8 baking dish or casserole dish of the same size. Preheat the oven to 350 degrees. Stir together flour, sugar, salt, and pepper, set aside. Pulse one cup of corn in a food processor until smooth. Set aside. Whisk eggs in a large bowl, then stir in flour and milk until combined. Whisk in melted butter and corn puree, add scallions and the rest of the corn. Stir to combine well. Transfer to the prepared baking dish and bake in preheated oven until puffed and lightly browned. Takes about 40 minutes. Sprinkle the top with chopped scallions if desired. Enjoy. FYI, this dish is delicious served hot or just warm.

Hi, my name D. V. Stone and I want to thank Delilah for having me here today. Like many of you, I wear different hats. Wife, mother, grandmother, author, and full-time medical receptionist. It’s a busy life for all of us and trying to keep up with chores and work can sometimes suck the life out of a person. No, I don’t have the cure. Sorry. But there are things that I do to help keep the sanity and balance.

I love to cook. I love to camp. Not on the ground mind you, we have an RV. Bonus! It has an outdoor kitchen. Why do I bring this up? I’m learning to cook over the open fire.

Recipe

These are called Hobo Bags.

I sprayed the foil with non-stick spray and then added seasoned chicken topped with potatoes and corn. A pat of butter, twist them shut and cook for about 45 min. No muss. No fuss. No dishes to clean up. You can do it on a grill or in the oven, too.

Camping reminds me of the old ways. Maybe you remember when you were a kid, unexpected dinner guests. Whoever was at our house got fed. “Mom, can fill in the blank stay for supper?” Could be heard from a lot of houses, including ours. Especially popular with my husband was finding out what his mom was making and then getting himself invited to a friend who wasn’t having a veggie-centric meal.

Since I live in the suburbs, daily shopping is a waste of time and gas. Also trying to eat healthier is hard in a grab and go situation. So, what are some of the things a busy person can do to

I keep a pretty well-stocked freezer and pantry of basics. I’m a big believer in semi-homemade. That means things like a rotisserie chicken is a staple in my house. Dinner, then sandwiches, and finally leftover pieces tossed with some frozen vegetables and seasoning gives me a great lunch for work. Onions, garlic, and peppers are always in the fridge.

In my local market, I found this huge bag of stir-fry and tossed out the sauce because of how much salt is in it. If you have some chicken or frozen shrimp and a few spices add some liquid and you’ve got a tasty meal. I’ve used wine, chicken broth, and I discovered a jalapeno peanut butter which cooked down adds a kick.

Later this year I have a book coming out titled Rock House Grill. The story is about a restaurant and characters with hopes and dreams. I get to combine several things. Classic Rock, cooking, and medical. I used to be an Emergency Medical Technician, and Shay, my female lead character, dreams of being a chef.

Lyncee Shillard: Everything has a time… (Recipe!)

I’m a big person of “living in the time”. It’s July 1st, and I want my Facebook timeline to flood with fun in the sun ideas, 4th of July recipes, and sexy guys in swimsuits with surf boards. I don’t want Halloween countdowns (I’m big into Halloween — in October) or the remaining days until Christmas.

I want to enjoy strawberry shortcake while watching the fireworks, not wonder what to get my grandson for Christmas.

Now, if you are — the person who has their Christmas shopping done by August 4th — have your Halloween decorations ready in April — know your exact Thanksgiving menu on March 23rd — do the entire year of birthday cards on January 1st — you are amazing in my book! The major reason I live in the moment is it stresses (like non-stop binge-eating doughnuts stress) me out to worry about Christmas presents in April.

As a rule, I live pretty much in the moment in all aspects of my life. I’ve been known to wake up and decide to take a 400-hundred-mile road trip. My husband has come home (he’s an over-the-road truck driver) and I’ve redone our bedroom — a couple of times.

This carries over into my writing. I sit down with a basic idea: people will die and there will be steamy sex. And go!

The thought of planning out an entire book makes me want to find doughnuts and vodka. A lot of both!

So, with all this being said that’s why I’m sharing my favorite July 4th drink twist and treat today…for those planners to maybe add it to next year’s 4th celebration!

Drink Recipe!

For a drink that “explodes” like fire works in your mouth – rim the glass with pop rocks 😀 This can be done with adult drinks, ohhhh say, raspberry vodka and lemonade. And kids – they love it! (Of course, I’m not giving them the vodka).

It’s Fireworks in a Cake.

What do you need:

1 (15.25-ounce) box white cake mix
1 (3.4-ounce) box vanilla instant pudding
4 eggs
3/4 cup vegetable oil
3/4 cup milk
1 (3-ounce) strawberry and blue raspberry jello
1 32 ounce whip topping
3 packages of pop rocks

What you do:

1. Preheat oven to 350 degrees. Spray a 9X13-inch pan with cooking spray.
2. Using an electric mixer, mix together cake mix, pudding mix, eggs, vegetable oil, and milk until well mixed, about 2 minutes. Pour into pan and bake for 40 minutes.
3. Let cool for 20-30 minutes.
4. Using a serving fork or straw, poke holes all over cake.
5. In a medium bowl, mix Jell-O and pour mixture slowly over cake so that it sinks down in holes. Cover with plastic wrap and refrigerate at least 3 hours.
6. Spread whipped topping on top of cake and top with pop rocks.

The things that makes the world so amazing is that there are planners and fly-by-the-seat-of-their-pantsers, and then, those in the middle. Which are you?

Linda O’Connor: IN THE GAME HOCKEY ROMANCE series (Recipe & Excerpt)

It’s February and we’re in the midst of a snowstorm in Ontario, Canada! I thought I’d share a spring-like recipe to try to nudge Mother Nature into giving us warmer temperatures. Everyone think spring!!

Lemon Mousse
Soften 1 package of gelatin in 1/4 cup cold water for 1-2 minutes. Then stir over low heat until dissolved.
Add: 1 Tbsp. lemon rind
½ cup fresh lemon juice
½ cup white sugar
Stir in 2/3 cup plain yogurt OR Greek vanilla yogurt 0% fat.
Whip 1 cup whipping cream with ½ cup sugar and fold into above. Chill 3-4 hours. Serves 4.

I’m excited to share a little bit about the fourth book of my In the Game Hockey Romance series. It’s a stand-alone story and was one of my favourites to write. Jordan’s “spirited” aunt pops in for a visit to give Jordan some much needed moral support. I believe that our loved ones are always looking out for us as our guardian angels. The man who’d walked in as she’d come out of the pool – and wasn’t he gorgeous? – glanced over at the teenagers and then stepped in front of her, blocking their view. “Hi. You’re Jordyn, right? Danni’s friend?”

Jordyn stumbled to a stop. The top of her head came level with the middle of his bare chest. There were only a few advantages to being short. Being eye level with that view – sculpted muscle, smooth skin, broad shoulders – was definitely one of them. She swept her gaze up to his face. He looked familiar, but she couldn’t place him.

“Ben Matthews. I work with the Quakes.” He took the towel from around his neck and handed it to her.

She took it without thinking. “Of course.” He was the head athletic therapist for the Clarington Quakes, the professional hockey team in town. She’d met him a couple of times at team events when she’d accompanied her friend, Dr. Danni Angelo, who was one of the team physicians. She hadn’t realized that impressive physique was under the loose team jacket he usually wore. “Hi, Ben. Yes, I’m Jordyn Kendra. Nice to see you.” She held up the towel. “Ah, thanks, but I don’t really need to take yours. I left one on the chair over there.” She pointed to the lounger at the end of the pool.

He nodded. “That’s okay. I can get another. You go ahead – it’s a bit chilly in here.”

Jordyn tilted her head. Really? The water was cool, but the air felt like a balmy summer day. She shrugged and wrapped the towel around herself. “I didn’t know you lived in this condo.”

He smiled. “Just moved in last month. I had an apartment close to the rink, but when something opened up with a view of the river, I jumped at it.”

“You can’t beat it. You’ll love it here. I’m sure you’re busy with the team, but it really is convenient having the pool, squash courts, and weight room in the building.”

“I’m certainly enjoying the view.” His eyes lit with amusement.

Jordyn nodded. “Well, I should get going. It was good to see you. Maybe we’ll see more of each other.”

He chuckled. “Maybe.”

That was funny? She didn’t get it. “Thanks for the towel.”

“Anytime.”

She walked toward the change room and glanced back as Ben dove into the water. Hmm. Perfect form and hardly a splash. For a huge guy, he was pretty graceful. It looked like he’d done that before. She fleetingly wondered if he ever had trouble with shrinking bathing trunks.

She headed inside and fiddled with the combination of the lock to her locker. She’d rather shower upstairs in her condo, but she’d brought a cover to wear in the elevator. She unwrapped the towel, threw it on the bench, and glanced at her reflection in the mirror across the room. Her heart pounded in shock.

Her bathing suit was completely see-through. Her eyes widened. It left absolutely nothing to the imagination. She groaned and covered her cheeks with her hands. No wonder the teenagers had been so interested.

She shook her head and laughed in embarrassment.

Geri Krotow: Favorite Fall Sips—A Recipe of Sorts

Autumn is my favorite time of year. Crisp air, bright colors, and I can wear my favorite sweaters without having an instant hot flash!

I’m a knitter so when I get my words done for the day I can be found in front of a good movie or binge watching a new series, sipping my favorite coffee or tea.

We’ve been blessed with two baristas in the Krotow family, one of which is my husband. He makes me a London Fog and I have to tell you, it’s the best non-coffee hot drink I’ve ever had. You don’t need an espresso machine or frother for this, either. A little handheld battery whip or frother is nice, but again, not necessary.

Here’s how I like my London Fog:

Steamed Milk (you can heat it in the microwave, just make sure to stir it so that you don’t get burned)
Brewed Earl Grey tea (or any other favorite tea)
Vanilla syrup (I like all natural, without corn syrup)

Pick out your favorite mug from your cupboard, which is probably way neater than mine.

Brew the tea of your choice according to instructions. Usually for black tea it’s best to steep it for 3-5 minutes.

Steam/heat the milk. If you can, froth it with a frother or whip.

Add vanilla syrup to your taste, to the hot tea. I like the bare minimum, as I enjoy the full flavor of the tea. But a lot of folks love tablespoons of the stuff. Do whatever works for you! Stir.

Top with steamed milk.

Enjoy with a great book or pair of knitting needles. Preferably both!

Seelie Kay: A little bit of this, a tiny pinch of that… (Recipe)

When I am not writing, I bake. Quite simply, baking relaxes me and helps clear my mind. I have charted many a character’s path while separating eggs and creaming butter!

Taught to bake at the knee of my Slovak grandmother, I began taking formal cooking classes at age 10. Since then, no one and nothing has managed to keep me out of my kitchen! (If I had not begun writing at a much earlier age, I may have become a pastry chef rather than a writer.)

My two favorite recipes are turtle brownies, basically your standard fudge brownie recipe with a swirl of caramel, pecans, and mini-semi-sweet chocolate chips, and three chocolate mousse cake, which is a luscious four-layer devil’s food cake with white chocolate, milk chocolate, and dark chocolate mousse in between the layers. When feeling particular ambitious, I might even encase this chocolatey confection in whipped cream!

And when I want the sweet smell of fall, I make an apple-pie-in-a-bag, a local favorite in southeast Wisconsin, or a no-knead bread, made with good old Wisconsin beer!

While I bake everything from scratch, I have learned a few short cuts over the years. For example, when pressed for time, I may substitute a box mix for the brownies or cake, and simply add the extras. And sometimes, I may even make the mousse from store-bought faux whipped cream and mix it with pudding rather than melted chocolate. And I make apple pies two at a time, so I always have one in the freezer. Of course, when I am feeling the need to cut back on the sugar and/or fat, I may utilize natural sugar substitutes or pureed fruits. (Who knew Gerber’s pureed prunes worked so well as a fat substitute in brownies?)

When I am in a reading mood, I am likely to brew some cinnamon hazelnut coffee and bake one of the most mouth-watering coffee cakes I have ever eaten. It’s a recipe passed on to me by a librarian from the Missouri Court of Appeals when I was a law clerk. She spoiled us by bringing in baked goods at least once a week, and the recipe we loved most was her Cinnamon Coffee Cake. When you have the urge to curl up with a good book and a hot cuppa, this sweet treat will provide a nice little slice of heaven!

CINNAMON COFFEE CAKE

1/2 cup margarine 1/2 cup shortening
2 cups sugar 2 eggs
1 cup sour cream 1 teaspoon vanilla
2 cups flour, sifted 1 teaspoon baking powder
1/4 teaspoon salt

Cream margarine, shortening and eggs. Add all other ingredients and mix well. Spread it in 9 x 13 pan. In a separate bowl, mix:

1 cup brown sugar 1 teaspoon cinnamon
1/2 cup margarine 2 cups chopped nuts

Layer on top of cake batter, swirl in slightly with a knife. Bake at 350 degrees for 50 minutes.

Gifts come in many shapes and sizes, but I believe the most precious ones are those delivered from the heart. It’s easy to get caught up in the mayhem of life, particularly during the Holidays, but every day, there are people amidst the chaos who help you, who take time out of their busy lives to make a difference in yours. This year, why not return that gift?

This Christmas, I’m making gift baskets filled with my favorite homemade things, such as macadamia-butterscotch chip cookies, shortbread, double chocolate-orange-pecan biscotti, Vermont maple syrup, and more. With each one, I’m sharing a part of myself with the other person.

My gift to you, one of my favorite recipes: Butterfinger Ice-cream Pie!

Apple Pie Ice-cream Pie

INGREDIENTS:
Chocolate cookie pie shell
1 Quart Apple Pie ice cream
Whipped cream
1/3 Cup of brown sugar
1/2 Cup chopped pecans or walnuts
1/2 Tsp. cinnamon
1/16th Tsp. cloves
Chocolate syrup
Caramel syrup

DIRECTIONS:
Place 1 quart of softened Apple Pie ice cream into chocolate cookie pie shell and smooth out flat. Layer with ½ inch or slightly more of whipped cream. Sift on brown sugar/chopped nuts/cinnamon/cloves mixture. Drizzle on top lines of chocolate syrup and caramel syrup. Cover, freeze and enjoy!!!
