Happy Eat Cake Day!
It’s another one of those crazy holidays! Only, this one is beginning here—today! I ran a contest in February, where I asked readers to suggest a brand-new holiday. Our friend, flchen (that’s you, Fedora!), suggested this one! We all love cake, so why not have a day of the year that is completely devoted to cake?

I like cheesecake and could eat that anytime. I am currently enjoying a homemade fruitcake made with pineapple and walnuts. It’s really solid, but so good. But, if I had to choose a single cake, it would be something like a carrot cake. My old boss made me a cake for my birthday once. It was a pineapple and walnut cake (super moist) with a thick cream cheese frosting. My top choice.

I actually have 2 — my mama’s German chocolate with the made from scratch coconut icing. Also my mama’s fresh strawberry cake with the, once again made from scratch, strawberry icing. She alternated them each year on my BD & I haven’t had either one since she passed away several years ago.
Just not the same………………..

Family recipe called Crazy Apple Cake. Similar to a coffee cake but with apple chunks. The only liquid is 1/2 C oil and from the apples. Normally no frosting but can have a glaze. I believe grandma bought it over from Germany.

I’m with Pansy Petal–I’m a fan of almost any kind of cake, LOL! I do love a good cheesecake! I also love Black Forest, carrot cake, angel food with whipped cream… just bring on the cake, please!

I haven’t met too many cakes that I’d turn down. I always have cheesecake for my first choice…after that…strawberry shortcake, chocolate cake with peanut butter icing, white cake with fluffy white icing & coconut, banana cake with a whipped icing, red velvet with a cream cheese frosting…..I’m an equal opportunity cake eater, I guess.
