I would shred the turkey, cut up some bite size tomatoes, shred some onions. Make some steam rice. Heat up my wok with chopped garlic then thrown in the turkey, onions and tomatoes. Add soy sauce and pepper with a touch of sesame seed oil. Put the finished turkey over a bowl or plate of steamed rice.

My family’s favorite use of turkey leftovers is to cut the turkey into bite sized pieces, heat them up, melt mozzarella over them, then put spaghetti sauce on top. Kind of like Chicken Parmesan, but using turkey instead. Personally, I like to make turkey salad.. turkey bites, onion, celery, mayo and seasoning. Yum!

We don’t ever get to the point that we have leftovers to get creative with because we eat the leftovers so fast! For leftovers in general I make “bowls”. I love using up the odds and ends in “bowls”.

Took me too long. Had to get up and chase a cat out of my backyard. I have a lot of squirrels back there eating. A privacy fence doesn’t stop him. Turkey sandwich, chips and soup.

My family isn’t the biggest fan of turkey, so we can only stand eating it once. What ever is left over we make it with rice and mole sauce with a side of salad or some turkey sandwiches with a few bags of chips and give it to a homless camp that has children on the other side of town.
